Serve this Italian-inspired avocado half on its own or as a side to a bowl of minestrone soup or a slice of pizza. Like a touch of sweetness? Garnish your avocado with a drizzle of balsamic glaze. If you remove the avocado seed and the indentation in your avocado half is on the small side, eat a spoonful of the avocado flesh to create a bigger opening.

Ingredients

Fresh mozzarella cheese

½ oz, roughly chopped

Grape tomatoes

1 medium, roughly chopped

Olive oil

1 tsp

Red-wine vinegar

½ tsp, or balsamic vinegar

Table salt

1 pinch(es), or to taste

Black pepper

1 pinch(es), or to taste

Avocado

½ item(s), medium, seeded

Basil

2 leaf/leaves, thinly sliced

Instructions

  1. In a small bowl, combine the cheese, tomato, oil, and vinegar. Season with the salt and pepper and toss to coat; spoon onto the avocado and garnish with the basil.
