Toasty tortillas, gooey cheese, and meaty Canadian bacon are enticing enough, but for an added kick, substitute one of the different varieties of shredded cheese available in your supermarket's dairy aisle for the Monterey Jack, such as Mexican or taco blend. Add some chopped fresh cilantro, scallions, and fresh or pickled jalapeño slices here for a zesty kick. If you aren't a meat-eater, swap the Canadian bacon for a scrambled egg white or try veggie bacon strips.

Flour tortilla

2 tortilla(s), medium

Reduced fat shredded Monterey Jack cheese

Uncooked Canadian bacon

1 slice(s), cut into strips

Salsa

Instructions

  1. Preheat the broiler; spray a baking sheet with nonstick cooking spray. Place the tortillas on the baking sheet; broil until blistered and softened, about 15 seconds on each side.
  2. Sprinkle the cheese over 1 tortilla; top with the bacon and salsa. Top with the remaining tortilla; spray with olive-oil-flavored nonstick cooking spray. Place on the baking sheet and broil until the cheese melts, about 1 minute on each side. Cut into wedges to serve.
