A favorite of ranch hands both south and north of the border, this healthy, hearty breakfast boasts lots of filling fiber and plenty of protein to keep you at a steady gallop until lunchtime. It's versatile too. Try it with a fat-free flour tortilla, use green salsa instead of red, lose the yolk and make an egg white scramble. Go dairy-free and top with a slice of avocado instead of sour cream. Headed out the door? Just roll everything up burrito-style and take it to go.

Corn tortilla

1 tortilla(s), medium, 6-inch, warmed

Reduced fat sour cream

2 tsp

Cilantro

1 Tbsp, chopped

Scallions

1 medium, thinly sliced

Instructions

  1. Spray small skillet with nonstick spray and set over medium heat. Add beans and 2 tbsp salsa. Cook, stirring often, until heated through, about 3 minutes.
  2. Meanwhile, spray another small nonstick skillet with nonstick spray and set over medium heat. Into saucer, break egg, then into skillet, slip egg. Sprinkle with salt. Reduce heat and cook egg slowly until white is set and yolk begins to thicken, or turn egg to cook both sides.
  3. On plate, place tortilla and spread with bean mixture. Top with egg, then with remaining 1 tbsp salsa, sour cream, cilantro, and scallion.
  4. Serving size: 1 filled toritlla
