There's nothing like a baked pizza fresh out of the oven that you could make any time of year for an equally satisfying lunch or dinner. Fresh cilantro, chicken, and barbecue sauce add pizzazz to this pizza, and black beans add flavor and fiber. The Mexican-style cheese of course helps tie everything together. You only need seven ingredients and a half an hour to make this pizza, thanks to using pre-baked dough, and with no special equipment or grilling required. You can top with other herbs you have on hand if you're not a fan of cilantro, such as oregano, parsley, or basil.

Ingredients

Uncooked boneless skinless chicken breast

½ pound(s), cubed

Barbecue sauce

½ cup(s)

Pizza dough mix

16 oz, pre-baked

Shredded reduced fat Mexican-style cheese

1½ cup(s)

Canned black beans

7½ oz, drained and rinsed (half a 15 oz can)

Onion

1 small, red, finely chopped

Cilantro

1 Tbsp, chopped

Instructions

  1. Place rack in center of oven. Preheat to 450ºF.
  2. Spray a nonstick skillet and stir-fry chicken over medium-high heat, about 10 minutes. Transfer chicken to medium-size bowl and toss with half barbecue sauce.
  3. Place pizza crust on a baking sheet. Sprinkle with 3/4 cup cheese. Arrange chicken and black beans over crust; sprinkle with onion and cilantro. Drizzle with remaining barbecue sauce; add remaining 3/4 cup cheese.
  4. Bake 10 minutes or until cheese bubbles. Cut into 6 large slices and serve immediately.
