Bananas Foster parfaits
Fat-free sugar-free instant vanilla pudding mix
½ oz, (about 2 tbsp)
Fat free skim milk
2 tsp, from stick, not tub
Packed brown sugar
½ fl oz, dark (1 tbsp)
1 medium, peeled and cut on diagonal into 1/4-inch-thick slices
3 cookie(s), made into coarse crumbs
- In medium bowl, whisk together pudding mix and milk until mixture begins to thicken slightly, about 2 minutes. Let stand 5 minutes to thicken.
- In medium nonstick skillet over medium heat, warm butter, brown sugar, 1 tbsp water, and rum until butter just begins to melt. Cook, stirring occasionally, until mixture is blended and smooth, about 2 minutes. Add banana slices and sprinkle with cinnamon. Cook, stirring gently with rubber spatula, until bananas just begin to soften and turn golden, about 3 minutes. Remove from heat; let cool 5 minutes.
- In each of 2 (6-oz) parfait glasses, alternate layers of pudding, banana mixture, and cookie crumbs, making total of 6 layers each. Serve at once, or cover and refrigerate for up to 2 hours.
