These parfaits don't take long to make, and the best part is you can serve them immediately or you can make them ahead and let them chill in the fridge for several hours so they're ready whenever you are.

Ingredients

Fat-free sugar-free instant vanilla pudding mix

½ oz, (about 2 tbsp)

Fat free skim milk

1 cup(s)

Light butter

2 tsp, from stick, not tub

Packed brown sugar

1½ tsp

Rum

½ fl oz, dark (1 tbsp)

Banana

1 medium, peeled and cut on diagonal into 1/4-inch-thick slices

Ground cinnamon

¼ tsp

Vanilla wafer

3 cookie(s), made into coarse crumbs

Instructions

  1. In medium bowl, whisk together pudding mix and milk until mixture begins to thicken slightly, about 2 minutes. Let stand 5 minutes to thicken.
  2. In medium nonstick skillet over medium heat, warm butter, brown sugar, 1 tbsp water, and rum until butter just begins to melt. Cook, stirring occasionally, until mixture is blended and smooth, about 2 minutes. Add banana slices and sprinkle with cinnamon. Cook, stirring gently with rubber spatula, until bananas just begin to soften and turn golden, about 3 minutes. Remove from heat; let cool 5 minutes.
  3. In each of 2 (6-oz) parfait glasses, alternate layers of pudding, banana mixture, and cookie crumbs, making total of 6 layers each. Serve at once, or cover and refrigerate for up to 2 hours.
