Not sure what to do with those slightly overripe bananas? Make some of these delicious dessert bars! By far the most difficult part will be waiting for the bars to cool completely before diving in. As well as the bananas, the bars feature brown sugar, old-fashioned oats, orange zest, orange juice, and dried cranberries. It's a medley of fruit flavors that are delicious when they're all put together. This recipe is super-easy to make since it basically all comes together in the food processor. It's so fun to bake that you'll find yourself experimenting with different fruits as the seasons change.

Ingredients

Cooking spray

Light butter

1 Tbsp, softened

Unpacked brown sugar

¼ cup(s)

Uncooked old fashioned rolled oats

1 cup(s)

All-purpose flour

½ cup(s)

Baking powder

½ tsp

Orange zest

2 tsp

Unsweetened orange juice

Dried cranberries

3 Tbsp

Banana

1 large, chopped

Instructions

  1. Preheat oven to 400°F. Coat an 8 x 8-inch baking pan with cooking spray.
  2. Put butter, brown sugar and banana in a food processor and process until smooth. Add oats, flour and baking powder and pulse until blended. Add zest, juice and cranberries and pulse until a smooth batter forms with bits of cranberry throughout.
  3. Spread batter in baking pan and smooth top with a wooden spoon. Bake until firm and golden brown, about 35 to 40 minutes. Cool completely before cutting into 8 bars.
