Ingredients

Shredded carrots

2 cup(s), lightly packed

Shredded red cabbage

2 cup(s), lightly packed

Radishes

1 cup(s), sliced, thinly sliced, red or daikon variety

Jicama

1 cup(s), lightly packed, shredded, peeled

Scallions

cup(s), chopped, chopped

Fresh mint leaves

3 Tbsp, chopped

Jalapeño pepper

2 medium, seeded and minced, or to taste

Orange marmalade

2 Tbsp, or preserves

Unseasoned rice vinegar

4 tsp

Dark sesame oil

2 tsp

Table salt

½ tsp

Sesame seeds

2 Tbsp, toasted

Instructions

  1. Toss together carrots, cabbage, radishes, jicama, scallions, mint, and jalapeños in large serving bowl.
  2. To make dressing, whisk together marmalade, vinegar, sesame oil, and salt in small bowl; drizzle over slaw and toss until coated evenly. Sprinkle with sesame seeds.
  3. Serving size: about 1 cup

Notes

This slaw’ is excellent as a side, but it's also a unique Asian accent to include on burgers or in sandwiches.
