Arctic char with tarragon butter

This oily fish is a great source of heart-healthy omega-3 fatty acids. It has a rich flavor that also works well with fresh parsley or thyme and rosé wine. This recipe, which takes just 15 minutes to make, features fresh tarragon, some butter, and white wine. All you have to do is broil the fish until it's cooked through, which should take about 10 minutes. Just keep an eye on it, as the strength of broilers can vary wildly. If you can't find arctic char, feel free to use trout or salmon instead. You can also grill the fish on high for 8 to 10 minutes.

Fresh tarragon
1 Tbsp, minced
Salted butter
1 Tbsp
White wine

Preheat broiler to high.

Place fish on a small rimmed baking pan; rub all over with salt and pepper. Sprinkle with tarragon and dot with little pieces of butter; pour wine over fish. Broil fish until no longer translucent in its thickest part, about 8 to 10 minutes. Yields about 3 1/2 ounces fish per serving.
