- Preheat the oven to 400ºF. Coat an 8-inch round cake pan with cooking spray, and line the bottom with parchment.
- In a large bowl using an electric mixer, beat the eggs and 1/2 cup of the sugar until light and fluffy. Stir in the milk, the melted butter, and the vanilla extract.
- Combine the flour and the cornstarch and fold it into the cake batter. Pour the mixture into the prepared pan.
- Layer the apple slices in a circular pattern on top of the cake. Combine the cinnamon and the sugar in a cup and sprinkle it over apples. Bake until a tester comes out clean when inserted into the center of the cake, about 30 to 35 minutes. Cut the cake into 8 pieces and serve.
