This Betty got a makeover, and she looks great! You'll love how easily this fun dessert comes together. The first layer is a mixture of oatmeal bread cubes, margarine, granulated sugar, and cinnamon. The other layer is comprised of apples, currants, lemon juice, brown sugar, vanilla extract, and ground nutmeg. Alternate the layers in a baking pan, then let your Betty bake away in the oven, and your dessert is ready to serve. You and your guests will love the contrasting, flavorful layers of cinnamon-infused bread and sweet apples and currants. Feel free to mix up the fresh fruits with your favorites or whatever you have on hand.

Ingredients

Olive oil cooking spray

Oatmeal bread

8 slice(s), cut into 1/2-inch cubes

Reduced-calorie margarine

¼ cup(s), melted

Sugar

1 Tbsp

Ground cinnamon

¾ tsp

Apple

4 medium, Granny Smith or McIntosh, peeled, cored and cut into 1/2-inch cubes

Currants

¼ cup(s)

Fresh lemon juice

1 Tbsp

Packed light brown sugar

¼ cup(s)

Vanilla extract

1 tsp

Ground nutmeg

¼ tsp

Instructions

  1. Preheat oven to 350ºF. Coat an 8-inch square baking pan with cooking spray.
  2. In a large bowl, combine bread cubes, margarine, granulated sugar and cinnamon; toss to combine. Arrange 1/3 of bread cube mixture in bottom of prepared pan.
  3. In a large bowl, combine apples, currants, lemon juice, brown sugar, vanilla and nutmeg. Spoon 1/2 of the apple mixture over bread layer. Top with 1/3 more bread cubes, remaining apple mixture and then remaining bread cubes.
  4. Cover with foil and bake 45 minutes. Uncover and bake until top is golden brown, about 15 minutes more. Cut into 8 pieces and serve hot.
