Your air fryer can be used in more ways than you may realize such as to make a two-person frittata. Just combine all the ingredients in a 6-inch round baking dish and set it in your air fryer to cook. You’ll end up with a light, veggie-packed meal that you can easily customize using the vegetables you have on hand.

Cooking spray

Egg

4 large egg(s), whisked

Fat free skim milk

1 Tbsp

Dried oregano

½ tsp

Table salt

¼ tsp

Black pepper

Baby spinach

1 cup(s), roughly torn

Shallot

1 large, finely chopped (about 1/3 heaping cup)

Shredded reduced fat Mexican-style cheese blend

½ cup(s)

Cherry tomatoes

5 medium, halved

Garlic clove

1 clove(s), minced

Instructions

  1. Preheat air fryer to 325℉, if necessary. Coat a 6-inch round baking dish with cooking spray.
  2. In a medium bowl, whisk eggs, milk, oregano, salt, and pepper. Gently stir in spinach, shallot, cheese, tomatoes, and garlic. Pour into prepared baking dish, and using a spatula or fork, press down on vegetables to submerge them in egg mixture.
  3. Transfer to air fryer and cook until eggs are set, 21 to 23 minutes.
  4. Serving size: half of frittata
