Air fryer spinach and cheese frittata by Digital 360 Coach Favin
4 large egg(s), whisked
Fat free skim milk
Fresh baby spinach
1 cup(s), roughly torn
1 large, finely chopped (about 1/3 heaping cup)
Shredded reduced-fat Mexican-style cheese
Fresh cherry tomato(es)
5 medium, halved
1 clove(s), minced
- Preheat air fryer to 325℉, if necessary. Coat a 6-inch round baking dish with cooking spray.
- In a medium bowl, whisk eggs, milk, oregano, salt, and pepper. Gently stir in spinach, shallot, cheese, tomatoes, and garlic. Pour into prepared baking dish, and using a spatula or fork, press down on vegetables to submerge them in egg mixture.
- Transfer to air fryer and cook until eggs are set, 21 to 23 minutes.
- Serving size: half of frittata
