If you need dinner on the table in record time, you should make this super-quick, super-tasty gumbo. Made mostly from frozen and canned convenience foods, which you could easily keep (or already have) on hand, this gumbo calls for simply combining key ingredients and heating to the desired temperature. You truly will have dinner on the table in 15 minutes. Look for pre-cooked chicken breasts at your deli counter, or purchase a rotisserie chicken and use what remains for another dinner or a double-batch of gumbo. For a soupier consistency, feel free to add a small amount of water or broth to the recipe.

Ingredients

Cooking spray

Frozen gumbo style vegetables

16 oz, okra, pepper and onion

All-purpose flour

1 Tbsp

Canned diced tomatoes

29 oz, with mild chilies

Cooked shredded chicken breast

3 cup(s), or cubed

Creole seasoning

1 tsp

Instructions

  1. Coat a large skillet with nonstick cooking spray. Add vegetables and sauté over high heat, stirring frequently, for 2 minutes. Stir in flour and cook 1 minute more.
  2. Stir in tomatoes, chicken and Creole seasoning. Cook over medium heat, stirring frequently, until hot, about 6 minutes. Yields about 1 1/2 cups per serving.
