Zucchini Salad with Shrimp and Feta

lemon zest

fresh lemon juice

jarred minced garlic


cooked frozen shrimp

2 oz, (boiled or grilled)

uncooked zucchini

1 small, very thinly sliced into ribbons

crumbled feta cheese

1 Tbsp

fresh parsley

1 Tbsp, chopped


Combine oil, lemon zest, lemon juice and garlic in a small bowl. Add shrimp and zucchini; toss to coat. Season to taste with salt and pepper, if desired; garnish with feta and parsley.

Tip: Use a mandoline to make zucchini ribbons if possible.
