Combine mayonnaise, oil, soy sauce, wasabi and minced ginger in small bowl. Top each cucumber slice with 1 piece pickled ginger and a dab of aioli. Top each with a shrimp and another dab aioli; garnish with scallions. Yields: 6 bites
