Notes

Preheat oven to 350°F. Slice top third off tomato; scoop out seeds and part of flesh. Toss rice and remaining ingredients together in a small bowl. Finely dice top third of tomato and add to rice mixture; spoon mixture into tomato. Place tomato in a small baking dish and bake until tomato softens and filling is hot, about 20 minutes. (PREP TIP: Leftover brown rice from Chinese takeout is perfect for this meal. Sprinkle the rice with water and microwave it on HIGH power for 30 seconds to soften.)
