1 Tbsp, sliced
Set tofu on a layer of paper towels to drain; cut into 1-inch cubes. Heat a medium nonstick skillet over medium-high heat. Off heat, coat pan with cooking spray; add tofu and cook, flipping once, until lightly golden. Add vegetables; cook, stirring occasionally, until hot and tender. Add oyster sauce, salt and pepper; garnish with scallions.
