Spiced Crusted Trout

raw rainbow trout (steelhead)

3 oz, fillet

olive oil

1 tsp

seasoned breadcrumbs

1 Tbsp

chili powder

¼ tsp, pinch

ground thyme

¼ tsp, pinch

lemon juice canned or bottled

1 Tbsp

plain baked potato(es)

4 oz


Preheat the oven to 450°F. Coat trout with oil, season to taste and place in a baking dish. Combine breadcrumbs, chili powder and thyme, and cover fish with bread crumb mixture. Bake until fish flakes with a fork. Serve with vegetables, drizzled with lemon juice, and potato.
