How to Prepare
<p> Combine cottage cheese, mayonnaise, shallot, curry powder, salt and pepper in a small bowl. Blend with a fork to a creamy texture. Cut the top third off of each tomato. Remove tomato pulp and seeds. Spoon filling into tomatoes. Yields 2 servings.</p>Time-Saver tip: The tomatoes can be filled up to a day in advance, stored covered, in the refrigerator.
