Preheat oven to 400°F. Place fish in a shallow baking dish; lightly coat fish with cooking spray and season with salt and pepper. Bake until fish is cooked through, about 8 to 10 minutes. Remove from oven and top with salsa and cilantro; serve with lemon wedge. (INGREDIENT SWAP OPTION: Substitute halibut for the snapper if desired.)
