Uncooked potato
1 small, cut into chunks, seasoned and roasted with
Olive oil

Lettuce

Carrots

Grape tomatoes

How to Prepare
Preheat oven to 375°F degrees. Line a baking sheet with foil coating with cooking spray. Season turkey breast with salt and pepper and roast for 30-40 minutes or until internal temperature reaches 165°F (approximately 25 mins per pound of meat for a turkey breast). Cover loosley with foil and let rest before slicing. <br/><br/>Meanwhile, toss potatoes with oil and season to taste with salt and pepper and optional spices or herbs. Coat a large baking sheet with cooking spray and spread potatoes evenly across baking sheet leaving space between cubes. When turkey is done and out of oven, raise oven temperature to 450°F degrees and roast potatoes for 30 minutes or until well browned, stirring half-way through. <br/><br/>Serve turkey and potatoes with a side salad of lettuce, carrots and other fresh vegetables tossed with dressing.
