Roast Salmon on Broccoli Slaw (For Two)

Dijon mustard

canned chicken broth

uncooked broccoli

2 cup(s), shredded


1 tsp, fresh, minced

fat-free Italian salad dressing

Preheat oven to 400F. Place salmon on a roasting pan. Combine mustard and broth in a cup. Brush on salmon. Bake for 10 minutes or until fish is cooked through.
Toss broccoli, chives and salad dressing together. Spread on a serving plate. Top with salmon. Yields about 3 oz salmon and 1 cup of slaw per serving.

Time-Saver tip: Look for packaged ‘broccoli slaw’ near the bagged lettuce in your supermarket produce aisle. It’s finely sliced broccoli stalks (and sometimes contains carrots) and will slash your prep time.
