Pork, Tomato Green Chili and Potato Stew
2 medium, red, cut into 1/2-inch cubes
canned tomatoes with green chilis
cooked lean pork tenderloin
4 oz, shredded (1/2 cup)
Boil or microwave potatoes until done. Drain potatoes and add to same pot or bowl. Add tomatoes and pork, mix thoroughly and heat through.
