Uncooked lean pork tenderloin
3 oz, cut into bite-sized cubes
Shallot
1 medium, halved
Green bell pepper
½ medium, halved
Splenda No Calorie sweetener packets
½ tsp, or other artificial sweetener
Balsamic vinegar
1½ tsp
Chicken broth
1 Tbsp
Less sodium soy sauce
1½ Tbsp
How to Prepare
Preheat broiler. Alternately thread pork, shallot and pepper onto a metal skewer. Place on broiler rack. Combine Splenda, vinegar, broth and soy sauce in a cup; brush over pork. Broil pork 4 inches from heat source for 5 minutes; turn pork over and broil until pork is cooked through, about 3 to 4 minutes more. <p/>Time-Saver tip: Pork is easier to slice if it’s partially frozen. Place the tenderloin on a baking sheet and place in the freezer for 30 minutes before cutting.
