Mushroom and Cheese Omelet

Coat a small nonstick skillet with cooking spray and heat over medium-high heat. Add garlic and sauté for 1 minute. Add mushrooms and sauté for 1 to 2 minutes, until mushrooms are slightly browned; set aside. Beat egg and egg whites together and reheat pan (with more cooking spray if needed). Add egg mixture to pan and cook for 1 to 2 minutes. Flip omelet and add mushrooms and grated cheddar. Fold over half the omelet so filling is covered and cook about 2 minutes more, until cheese melts.
