Mexican Eggs with Black Beans and Salsa

Coat a small nonstick skillet with cooking spray. Beat egg, egg whites, cumin, salt and pepper together in a bowl; pour egg mixture into skillet. Cook over medium heat until eggs are set and no longer glossy. Ease egg onto a serving plate and spoon beans down center of egg; top with salsa and sour cream. (SHOPPING TIP: You can use liquid egg whites instead of wasting some of the egg yolks if you prefer.)
