Melted Cheese over Brown Rice

cooked long grain brown rice
shredded fat-free Cheddar cheese
Preheat broiler. Microwave cooked rice with 1 tablespoon of water so the consistency becomes slightly sticky. Coat bottom of an oven-proof skillet with cooking spray and press rice into bottom of pan. Top with cheese and broil until cheese melts and is slightly brown, about 2 to 3 minutes. Remove from oven, slice into wedges and serve.
