uncooked shallot(s)

Peppermint leaves

1 Tbsp, fresh, minced

fresh lemon juice

olive oil

1 tsp, extra virgin

melba toast(s)

In a small bowl, toss together all ingredients, except melba toast; mash lightly with a fork. Divide bean mixture among melba toast and serve.
