Notes

Heat oil in medium nonstick skillet over medium-high heat. Add carrots, scallions and ginger; stir-fry until carrots are almost tender, about 2 minutes. Add pasta; toss and stir-fry until hot. Remove from heat; stir in soy sauce and red pepper flakes.
