Notes

Coat a stove-top grill pan with cooking spray; heat pan for 30 seconds over medium-high heat or until a drop of water sizzles when it hits the pan. Dust pineapple on both sides with nutmeg and Splenda. Place pineapple on pan and grill until pineapple has grill marks, about 1 to 2 minutes; flip pineapple and cook until grill marks appear, about 1 minute more. Remove pineapple from heat and sprinkle with lemon juice. (TIME-SAVER TIP: Buy already sliced pineapple from your supermarket’s salad bar or in plastic containers in the produce section.)
