1 medium, (cored and finely chopped)


Coat a nonstick skillet with cooking spray. Beat egg, egg whites, dill, salt and pepper together in a small bowl and pour into skillet; cook over medium heat until egg mixture is almost set. Sprinkle with cheese and cook until egg mixture is firm. Fold omelet in half and ease onto a serving plate; top with chopped tomato. (SHOPPING TIP: Look for already crumbled feta cheese in plastic containers in your supermarket’s cheese department.)
