Farmer's Market Salad with Tempeh
yellow bell pepper
½ large, chopped
1 cup(s), cherry, halved
fat free cottage cheese
Place chunks of tempeh on a microwaveable dish and warm in microwave, about 25 seconds. Combine greens, arugula, pepper and tomatoes in a bowl. Toss with vinegar and oil; top with cottage cheese and season to taste. Save apple for dessert.
