Egg in a Nest with Bacon
reduced-calorie whole wheat bread
1 slice(s), (cut a 2-in circle in middle with cookie cutter)
1 large egg(s)
cooked crisp center cut bacon
Lightly coat both sides of bread and bread circle with cooking spray; toast bread and bread circle until golden in a small nonstick skillet over medium-high heat. Remove bread circle; set aside. Crack egg into hole of bread and season with salt and pepper; cook until egg is golden on bottom, about 2 minutes. Carefully flip bread and egg; cook until egg white is set and yolk is cooked, 2 minutes more. Serve with bread circle and bacon.
