Notes

In mug, combine shallot and pepper and spray with nonstick spray; microwave 2 minutes. Stir together bacon, eggs, water, 1 tbsp cheese, and a pinch of salt and pepper; pour into mug and stir to combine. Microwave 1 minute; stir well. Microwave an additional 30 seconds; stir. Top with remaining 1 tbsp cheese; microwave 30 seconds to melt.
