Notes

Cut egg in half lengthwise and scoop out yolk; place yolk in a small bowl and mash with a fork. Stir in mayonnaise, sour cream, chili powder, salt and black pepper; stir in red pepper until just combined. Spoon yolk mixture back into whites. (PREP TIP: Don’t throw out your bell pepper trimmings. Instead, mince and freeze them for up to one month to be used in soups, stews or this deviled egg recipe.)
