Chicken over Braised Kale and Tomatoes

Notes

Coat a medium nonstick skillet with cooking spray and heat over medium-high heat. Saute garlic for 30 seconds and then add kale to skillet. Saute for 1 to 2 minutes, until dark green and softened. If pan gets dry, add water to kale while cooking. Add tomato and turn off heat. Season to taste with salt and pepper. Place chicken on a plate and spoon tomato-kale sauce on top. Serve with rice.
