Notes

Halve zucchini lengthwise and scoop out center seeds; broil in a toaster oven until softened and lightly browned. In a small bowl, combine ricotta, Parmesan and garlic powder; spoon into zucchini halves. Sprinkle zucchini halves with breadcrumbs; broil until lightly browned, warm and bubbly. Garnish with zest and basil or mint.
