How to Prepare
Coat a large nonstick skillet with cooking spray. Beat eggs and egg substitute in a medium bowl. Add broccoli, shallot, salt, pepper, thyme and hot pepper sauce. Pour into skillet and cook over medium heat until set, about 6 to 8 minutes. Cut into wedges and top with dollops of sour cream. Yields 2 servings.
