How to Prepare
Coat a nonstick skillet with cooking spray. Add scallion, rice and peas to skillet; cook over medium-high heat until ingredients are hot, about 2 minutes and then sprinkle with soy sauce. Pour egg into skillet and scramble over medium heat until egg is set with no wet spots, about 1 minute. (PREP TIP: For a dinner version of this meal, add 1 slice of chopped Canadian bacon and a small finely minced chile.)
