Notes

Combine blueberries, Splenda, water and lemon juice in a small saucepan; set over medium-high heat and cook, stirring constantly, until blueberries are pulpy, about 3 to 5 minutes. Divide cottage cheese between 2 sundae glasses and top each with 1/2 of blueberry sauce; garnish with mint. (INGREDIENT SWAP OPTION: You can also make this sauce with unsweetened frozen blackberries but may have to add another tablespoon of sugar substitute.)
