Baked Beef over Polenta

cooked lean beef steak

2½ oz, cut into strips

fat free salsa

fat-free soy cheese

mixed greens

fat-free Italian salad dressing

Preheat broiler. Season onion and pepper to taste and broil until tender. Remove from broiler and set oven temperature to 350°F. Spread polenta on a small baking pan and place onion, pepper, beef, salsa and cheese on top. Bake until heated through and cheese is bubbly. Serve with salad tossed with dressing.
