Three Ways to Zest a Lemon

Microplane Zester
Starting with a washed lemon, hold the zester in one hand, the lemon in the other and gently scrape the lemon across the zester’s blades to remove just the outer yellow peel. Be careful not to grate deeper, as the white pith beneath is very bitter.

Box Grater
Starting with a washed lemon, set the box grater on your work surface. Hold the box grater in place with one hand, and the lemon in the other. Gently rub the lemon up and down across the small holes of the grater to remove just the outer yellow peel.

Zest Peeler
Starting with a washed lemon, hold the zester in one hand, the lemon in the other and gently scrape the zester across the lemon’s skin, creating long strands of peel.

Note: When possible, use organic lemons for zesting, as pesticides and waxes can reside on the skin of conventional lemons.
