Ingredients

Brown basmati & wild rice, cooked

250 g, cooked as per pack, microwave pouch

Green or Brown Lentils, cooked

1 can(s), large, drained, green, drained and rinsed

Pistachios

20 g, 2 tablespoons, roughly chopped

Dill, Fresh

1 tablespoon(s), finely chopped

Mint, Fresh

1 tablespoon(s), finely chopped

Coriander, fresh

1 tablespoon(s), finely chopped

Dried cranberries

10 g, 1 tablespoon, roughly chopped

Lemon

½ zest(s) of 1, grated

Red onion

½ medium, thinly sliced

Ground Cumin

1 teaspoon(s), level

Instructions

  1. Cook the rice to pack instructions.
  2. Put in a large bowl, season to taste, then add the green lentils, pistachio nuts, herbs, cranberries, lemon zest, red onion and ground cumin. Stir to combine, then serve.
