Mafe, or Senegalese groundnut stew, is a rich, creamy peanut soup.

Ingredients

Vegetable Oil

1 teaspoon(s)

Onion

1 large, chopped

Garlic

5 clove(s), finely chopped

Root Ginger

1 teaspoon(s)

Chilli, green or red

1 individual, Scotch bonnet chilli or habanero chilli

Tomato Purèe

1 tablespoon(s), level

Tinned Tomatoes

2 can(s), large

Vegetable stock cube

1 cube(s), to make 500ml

Smooth Peanut Butter

8 tablespoon(s), heaped

Sweet potato, raw

400 g

Unsalted Peanuts

1 serving(s), small

Instructions

  1. In large pot, heat the oil over medium-low. Add the onion and 1⁄2 tsp salt and cook, stirring often, until softened for 5 to 7 minutes. Add the garlic, ginger, and chilli and stir for 30-45 seconds, until fragrant. Stir in the tomato paste, then tomatoes, stock, and peanut butter.
  2. Using a blender, puree the soup until smooth. Add the sweet potatoes, 1⁄4 tsp black pepper, and 1⁄2 tsp salt to soup and bring to boil. Reduce heat to simmer. Cover and cook until the potatoes are tender, stirring occasionally, about 20 minutes. Season to taste with salt and black pepper. Divide soup among 8 bowls and top with the crushed peanuts.
