  1. Mist a medium nonstick frying pan with cooking spray and cook the onion and fennel for 8-10 minutes over a low heat until al dente. Increase the heat to high, add the sausage meat and fennel seeds and cook for 5-6 minutes until the meat is browned. Add the chicken stock and soured cream and stir until well combined. Season to taste.
  2. Meanwhile, cook the pasta in a pan of boiling water for 10-12 minutes until tender. Drain and add the pasta to the pan of sauce. Toss to coat and serve garnished with the reserved fennel fronds.


You can use any sausages you like in this simple dish – and any pasta shape, too.
