This stuffing gets a nutrient boost from wholemeal bread and is infused with the distinct flavors of sage and chive.

Ingredients

Calorie controlled cooking spray

4 spray(s)

Wholemeal bread, sliced

12 slice(s), medium

Olive Oil

2 teaspoon(s)

Low Fat Spread

2 teaspoon(s), level

Onion

1 large, diced

Celery, Raw

3 stick(s), diced

Thyme, Dried

2 teaspoon(s), level

Sage, Dried

2 teaspoon(s), level

Chicken stock cube(s)

1 cube(s), to make 500ml stock

Chives, Fresh

2 tablespoon(s), snipped

Instructions

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Mist a 4.5-litre baking dish with cooking spray.
  2. Cut the bread into cubes, arrange on a baking tray and mist with cooking spray. Bake for 8-10 minutes, or until lightly toasted. Remove from the oven and set aside; leaving the oven on.
  3. Meanwhile, in a large pan set over medium-high heat, heat the oil and butter together for 1-2 minutes. Add the onion and celery and sauté until soft for about 3 minutes. Add the thyme and sage and season with salt and pepper, stirring to coat. Cook for a further minute, until herbs are fragrant.
  4. Transfer the onion mixture to a large mixing bowl. Add in the bread, stock and chives; tossing to combine. Spoon the mixture into the prepared baking dish and cover with foil. Bake for 20 minutes, then uncover and bake for another 15 minutes, or until golden brown.

Notes

You can make this stuffing in advance and bake it just before serving. The stuffing will last up to 3 days in the fridge or 3 months in the freezer.
