Creamy mashed potatoes is the ultimate comfort food. A twist on one of our favourite potato recipes, we’ve added soft cheese into the mix to transform this simple dish into, quite simply, the best mashed potatoes ever! Perfect as a side or as an accompaniment to low-fat sausages or mince, you could even swap in sweet potatoes to make it extra healthy.
1000 g, (1kg), peeled and cut into large chunks
Medium fat soft cheese
- Put the potatoes into a large saucepan and cover with cold water. Add the salt and bring up to the boil. Cover and simmer for about 20 minutes, until tender.
- Drain the potatoes, then mash with a potato masher. Beat with a wooden spoon for a few moments, then beat in the low fat soft cheese and milk.
- Reheat the mash over a low heat, stirring all the time to prevent sticking. Season with black pepper, then serve.
Use a combination of half potatoes and half butternut squash for a delicious variation.
