Spinach, walnut & feta rolls

These vegetarian rolls are a great addition to an afternoon tea, or perfect for a light lunch.

1 large, finely chopped
Spinach
200 g, young leaf
Light feta cheese
100 g, crumbled
Walnut Halves
25 g, finely chopped
Breadcrumbs, fresh

Mist a large frying pan with cooking spray and cook the onion for 6-8 minutes over a medium heat until softened, adding a splash of water if needed to stop it catching. Add the spinach and cook until it has wilted and any excess moisture has evaporated. Transfer to a plate and spread out to cool, then squeeze out any excess liquid. Transfer to a bowl and mix in the feta, walnuts and breadcrumbs, then season to taste.

Preheat the oven to 220°C, fan 200°C, gas mark 7 and line a baking sheet with baking paper. Mist the tops of both sheets of filo with cooking spray, then lay one on top of the other. Spoon the filling along one long side of the pastry, then roll up like a sausage roll.

With the pastry seam underneath, make a few cuts through the top of the filo to expose the filling, then slice the roll into 8 equal pieces. Mist the tops with a little more cooking spray and scatter over the sesame seeds. Put on the prepared baking sheet and bake for 20 minutes or until the pastry is crisp and golden, then serve.
