Roasted red peppers in brine, drained

4 medium, trimmed and sliced
Challa bread

Coat a large frying pan with cooking spray and heat over a medium heat. Gradually add the spinach and cook for 3-5 minutes, until wilted. Remove from the heat and cool slightly.

In a large bowl, whisk together the milk and mustard, season, then whisk in the eggs. Stir in the red peppers, spring onions, challa bread, cheese, and spinach. Coat a 13 x 9–inch baking dish with cooking spray; pour the bread mixture into the dish. Cover and refrigerate 8 hours or overnight.

Remove the dish from the refrigerator and uncover. Preheat the oven to 180°C. Bake the strata for 45 minutes, until lightly browned on top and set. Let stand for 5 minutes before serving.
