Spaghetti with chilli, cherry tomatoes & prawns

Ingredients

White pasta, dry

300 g

Calorie controlled cooking spray

4 spray(s)

Garlic

3 clove(s), crushed

Chilli flakes

¼ teaspoons, level

Cherry Tomatoes

150 g, halved

King Prawns, Raw

240 g, peeled and deveined

Tomato Purèe

1 tablespoons, level

Lemon(s)

2 zest(s) of 1

Parsley, fresh

10 teaspoons, roughly chopped

Instructions

  1. Bring a large pan of water to the boil and cook the spaghetti according to pack instructions. Drain, reserving 150ml of the cooking water.
  2. Halfway through the pasta cooking time, mist a large frying pan with cooking spray and heat over a medium heat. Add the garlic and chilli and stir, continuously, for 1 minute until the garlic just begins to brown.
  3. Stir in the tomatoes and prawns, then cook for 1 minute. Add the reserved pasta water and tomato purée, then simmer for 3-4 minutes.
  4. Stir the spaghetti into the pan, season to taste and serve garnished with the zest and parsley.
