Soft cheese & salmon canapés
Medium fat soft cheese
2 medium, finely chopped
1 tablespoons, or
1 portion(s), medium, cut into 12 x 2cm slices
12 individual, with the seeds scooped out
1 teaspoons, or
1 sprig(s), fresh, to garnish
- Finely slice about 20g of the salmon and set aside for garnish. Finely chop the remainder. In a bowl, mix together the low fat soft cheese, spring onions, chopped salmon and dill or parsley. Season with black pepper.
- Using a teaspoon, hollow out some of the seeds from each piece of cucumber to make a small depression. Spoon the smoked salmon mixture into the hollowed out cherry tomatoes. Position the tomatoes in the cucumber cups and arrange on a serving platter. Garnish with the reserved smoked salmon and sprigs of dill or parsley, then serve.
