Enjoy these healthy, tasty canapés, ideal to serve if you're entertaining accompanied with something chilled.

Ingredients

Smoked salmon

75 g

Medium fat soft cheese

200 g

Spring Onions

2 medium, finely chopped

Dill, Fresh

1 tablespoon(s), or

Parsley, fresh

1 tablespoon(s)

Black pepper

¼ teaspoon(s)

Cucumber

1 portion(s), medium, cut into 12 x 2cm slices

Cherry Tomatoes

12 individual, with the seeds scooped out

Dill, Fresh

1 teaspoon(s), or

Parsley, fresh

1 sprig(s), fresh, to garnish

Instructions

  1. Finely slice about 20g of the salmon and set aside for garnish. Finely chop the remainder. In a bowl, mix together the low fat soft cheese, spring onions, chopped salmon and dill or parsley. Season with black pepper.
  2. Using a teaspoon, hollow out some of the seeds from each piece of cucumber to make a small depression. Spoon the smoked salmon mixture into the hollowed out cherry tomatoes. Position the tomatoes in the cucumber cups and arrange on a serving platter. Garnish with the reserved smoked salmon and sprigs of dill or parsley, then serve.
